Mediterranean Bean Salad
This dense bean salad is the perfect high protein, high fiber dish to meal prep for the week! White beans, chickpeas and feta cheese make this salad a protein power house. Pair with your favorite chicken breast recipe for a high protein lunch idea.

INGREDIENTS
| 1 - 15 oz can | chickpeas, drained and rinsed |
| 1 - 15 oz can | white cannellini beans, drained and rinsed |
| 1/2 small | red onion, finely diced |
| 1 | red bell pepper, finely diced |
| 1/2 | English cucumber, finely diced |
| 1/2 cup | Athenos Imported Feta in Brine, crumbled |
| ½ cup | freshly chopped parsley |
| ½ cup | freshly chopped mint |
| 4 | green onions, finely diced |
| ½-1 cup | Greek vinaigrette |
| Extra Athenos Import Feta in Brine | crumbled for topping |
Method

- In a large bowl add chickpeas, white beans, red onion, bell pepper, english cucumber, parsley, mint, green onions and feta cheese.
- Drizzle with ½ cup of greek vinaigrette and gently toss together. Taste test for seasoning and add more vinaigrette if desired.
- Garnish with extra Athenos feta cheese crumbles.
