Classic Cranberry Sauce with Whipped Feta
This rich, caramel orange cranberry sauce is perfectly paired with a bed of Athenos Whipped Feta. Prepare an easy batch of this homemade cranberry sauce and once cooled, spread a layer of Athenos Whipped Feta Dip and Spread inside a shallow bowl or platter as a tangy base to your rich cranberries. Spread on turkey, ham, or any other holiday protein.
INGREDIENTS
| 12 oz | bag of cranberries (fresh or frozen) |
| ½ cup | brown sugar |
| ¼ cup | honey |
| zest and juice from an orange | |
| pinch of kosher salt | |
| 8 oz | container of Athenos Traditional Whipped Feta Dip and Spread |
Method
- In a medium saucepan add cranberries, sugar, honey, orange zest, orange juice, and salt. Mix together and bring to a rolling simmer. Cook until most of the cranberries have busted and the sauce has thickened. Stir frequently until the mixture can coat the back of a spoon.
- Remove cranberry sauce from the heat and let cool to room temperature.
- In a shallow bowl or platter, spread whipped feta in an even layer. Top with cooled cranberry sauce and serve. Garnish with extra orange zest if desired.
*Note: you can make this dish the night before. Follow 1 & 2. Place the cooled cranberry sauce into an airtight container and refrigerate. Before serving, follow step three.
