A new way to fish taco! These healthy salmon tacos are made with traditional taco seasoning and topped with aromatic cilantro, creamy avocado, and tangy feta cheese crumbles.

Ingredients

  • 1 lb skinless salmon filets
  • 1 tbsp taco seasoning
  • 1 tbsp olive oil
  • 8 corn tortillas, warmed
  • 1 avocado, sliced
  • Fresh cilantro, roughly chopped
  • Fresh lime wedges, for squeezing
  • 3 oz Athenos Crumbled Traditional Feta Cheese

Method

  1. Preheat the oven to 425 F. Line a small baking sheet with parchment paper. Place salmon filets onto the center of the baking sheet and run with olive oil and taco seasoning until evenly coated.
  2. Bake salmon for 8-10 minutes or until it flakes off easily.
  3. Warm corn tortillas and distribute salmon evenly into each tortilla. Top tacos evenly with avocado slices, chopped cilantro, and feta cheese crumbles before serving.
