Ingredients
- ½ package frozen puff pastry, thawed
- 1 cup cherry tomatoes, halved
- ¼ cup pesto
- ⅓ cup chopped sun dried tomatoes
- 3 oz Athenos Crumbled Traditional Feta Cheese
- 1 egg, whisked
Method
- Preheat the oven to 400 F and line a baking sheet with parchment paper.
- Cut each puff pastry sheet into 9 pieces.
- Drizzle 1 tbsp of pesto onto the parchment paper. Top with 3 cherry tomato halves, a few pieces of sun-dried tomatoes, and 1 tbsp of crumbled feta cheese.
- Top with the puff pastry and brush a thin layer of egg wash on top.
- Bake for 12-15 minutes or until the pastry has puffed and golden brown.
