Pesto Sun Dried Tomato Feta Puff Pastry

This viral baked puff pastry is trending for good reason! Easy to make, totally customizable, and taste delicious! Try this sweet and savory pastry boasting with notes of feta.

Ingredients

  • ½ package frozen puff pastry, thawed
  • 1 cup cherry tomatoes, halved
  • ¼ cup pesto
  • ⅓ cup chopped sun dried tomatoes
  • 3 oz Athenos Crumbled Traditional Feta Cheese
  • 1 egg, whisked

Method

  1. Preheat the oven to 400 F and line a baking sheet with parchment paper.
  2. Cut each puff pastry sheet into 9 pieces.
  3. Drizzle 1 tbsp of pesto onto the parchment paper. Top with 3 cherry tomato halves, a few pieces of sun-dried tomatoes, and 1 tbsp of crumbled feta cheese.
  4. Top with the puff pastry and brush a thin layer of egg wash on top.
  5. Bake for 12-15 minutes or until the pastry has puffed and golden brown.
