This Lemon Feta Kale Salad is a refreshing and nutritious dish, featuring kale tossed with creamy feta, crunchy almonds, and a tangy lemon vinaigrette. It's perfect for a light lunch or a vibrant side dish.

Ingredients

  • 1 head of lacinato kale, stems removed and chopped into thin strips
  • 1/4 cup sliced almonds
  • 1/3 cup Athenos Traditional Feta Cheese Crumbles
  • 1/4 cup olive oil + extra for massaging kale
  • 1 lemon, squeezed
  • 1 tsp dijon mustard
  • 1 tsp honey
  • 1/2 tsp kosher salt
  • Cracked black pepper

Method

  1. Add chopped kale to a medium mixing bowl and drizzle very lightly with olive oil. Massage the kale gently until the leaves are a bit darker in color and tender.
  2. In a small mason jar or bowl, whisk together olive oil, dijon mustard, honey, kosher salt, and a few turns of cracked black pepper. Whisk together until the dressing has emulsified.
  3. To the kale, add sliced almonds and feta cheese crumbles. Drizzle the top with the dressing and toss together before serving.
