Hummus Breakfast Toast

Spice up your breakfast toast! Swap out avocado for Athenos Pine Nut Hummus for new, awakened flavors! This savory toast is healthy, protein-rich, and full of flavor.

Ingredients

  • Chili oil
  • 1-2 eggs
  • 1 large slice sourdough or french bread
  • 2 tbsp Athenos Pine Nut Hummus
  • Fresh Cilantro leaves

Method

  1. Heat a non-stick skillet on medium-low heat. Add 2 tsp of chili oil and spread evenly into the pan. Crack in 1-2 eggs and cook for 3-4 minutes or until the whites are set and the yolk is to desired done-ness (I did medium sunny side up).
  2. Toast sourdough bread slice and spread on Athenos pine nut hummus evenly.
  3. Top toast with egg, another 1-2 tsp of chili oil, and fresh cilantro leaves.
