This Greek Couscous Salad is a vibrant, zesty twist on pasta salad. It features pearled couscous combined with crisp cucumbers, juicy tomatoes, and creamy feta cheese, all enhanced by fresh dill and basil for a refreshing and flavorful dish.

Ingredients

  • 1 cup whole wheat couscous, uncooked
  • 1 cup halved cucumber slices
  • 1 large tomato, chopped
  • 1 pkg. (4 oz.) Athenos Crumbled Feta Cheese
  • 1 tbsp. chopped fresh dill
  • ½ cup Italian or Greek dressing
  • 2 tbsp chopped fresh basil

Method

  1. Cook the couscous according to the package directions. Transfer to a large bowl and cool for 10 minutes.
  2. Add the cucumbers, tomatoes, feta cheese, fresh dill, and fresh basil to the cooled couscous. Mix well.
  3. Pour in the Italian or Greek dressing and toss until all ingredients are evenly coated.
  4. Taste and adjust seasoning with salt and pepper if needed.
  5. Serve immediately at room temperature or chill in the refrigerator until ready to serve.
