A fresh, Mediterranean take on salsa! Use this as a topper for freshly grilled salmon and shrimp or on its own served with toasty pita chips.
- 6 oz Athenos Crumbled Traditional Feta Cheese
- ½ cup halved Kalamata olives, chopped
- ½ cup finely diced red onion
- ½ cup diced cucumbers
- ½ cup diced roasted red peppers
- 2 tbsp finely chopped fresh mint
- ½ cup Greek Vinaigrette
- Pita chips, for serving
- In a large mixing bowl add feta cheese, olives, red onion, cucumber, roasted red peppers, mint, and Greek vinaigrette. Mix gently until well combined.
- Serve cold or at room temp with pita chips.
