Greek Flatbread

Craving a taste of the Mediterranean? This Greek-inspired flatbread is the easiest way to spice up your work-from-home lunch.

Ingredients

  • 2 oblong flatbreads, cut in half
  • 1 cup pesto
  • 1/4 cup sliced drained artichoke hearts
  • 1 cup Athenos Traditional Crumbled Feta Cheese
  • 1 cup chopped tomatoes
  • 2 tbsp halved, pitted kalamata olives
  • 1 green onion, sliced
  • 1 tbsp chopped fresh parsley

Method

  1. Heat oven to 400ºF.
  2. Place bread pieces in single layer on baking sheet; brush with reserved artichoke marinade.
  3. Top with cheese, tomatoes, artichokes and olives.
  4. Bake  10 to 12 min. or until heated through.
  5. Top  with onions and parsley.
