Crispy Roasted Carrots with Feta

If you need an easy, and deliciously tasty vegetable side dish to your holiday menu, make these simple golden roasted carrots with feta! Roasting the carrots adds a delicious depth of flavor and the feta cheese makes each bite tangy and delicious.

Ingredients

  • 2 lbs carrots, peeled and cut into 2-inch pieces on a bias
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • Cracked black pepper
  • 1 tsp garlic powder
  • 1 tsp dried oregano (or dried herb of choice)
  • ½ cup Athenos Traditional Feta Cheese Crumbles

Method

  1. Preheat the oven to 425°F.
  2. Peel and cut the carrots lengthwise, then slice into 2-inch pieces on a diagonal bias. Place the carrots on a large baking tray.
  3. Drizzle the carrots with olive oil, kosher salt, cracked black pepper, garlic powder, and dried oregano. Toss to coat evenly and spread into a single layer with space between each piece.
  4. Bake for 20 minutes. Remove from the oven, stir, and flip the carrots. Return to the oven for an additional 10 minutes.
  5. Remove from the oven and sprinkle with feta cheese. Bake for another 5-10 minutes, until the feta melts slightly and becomes golden brown.
  6. Transfer to a serving dish and sprinkle with extra feta cheese before serving.
