All the flavor of your favorite fried chicken—without the guilt! These crispy chicken cutlets are air fried in a seasoned panko coating, topped with creamy Athenos Traditional Whipped Feta Cheese Dip & Spread and finished with a sweet-and-spicy honey drizzle. Perfectly crunchy, tangy, and just a little kick of heat.
Ingredients
- 1/3 cup honey
- 1 1/2 tsp Frank's Hot Sauce
- 3/4 tsp dried chili flakes
- 2 chicken breasts, cut in half lengthwise
- 2 tsp paprika
- 1 tsp kosher salt
- 1/2 tsp Italian Seasoning
- 1 tsp black Pepper
- 1/4 tsp cayenne pepper
- 1/4 cup all purpose flour
- 2 eggs, whisked
- 1 cup panko breadcrumbs
- Olive oil spray
- 4 oz Athenos Traditional Whipped Feta
Method
- In a small sauce pot add honey, hot sauce and chili flakes. Stir together and heat on medium and heat for 5-10 minutes or until combined. Set aside to cool.
- In a small bowl mix together the seasoning ingredients. Add paprika, salt, garlic powder, italian seasoning, a few turns of black pepper and cayenne pepper.
- In two separate, medium, shallow bowls add flour and panko bread crumbs. Divide the seasoning mixture between the flour and the panko bread crumbs and stir each bowl together. In a third shallow bowl whisk together two eggs.
- Preheat an air fryer to 400 F.
- With a fork, dip each chicken breast into the flour mixture first, then into the egg mixture and then press into the panko mixture until evenly coated. Continue with each chicken cutlet.
- Spray chicken cutlets and bottom of the air fryer basket evenly with spray olive oil. Cook chicken in the preheated air fryer for 15 minutes at 380. Flip the chicken and spread an even layer of whipped feta onto the center of each chicken breast. Continue to cook for 4-5 minutes or until the chicken reaches an internal temperature of 165 F.
- Remove chicken from the air fryer and drizzle with hot honey before serving.
