Chicken Street Tacos with Tajín Crumbled Feta Cheese

Your favorite citrus chicken street taco has been topped with Athenos Tajín Crumbled Feta Cheese for a sharp flavor upgrade. Add the zesty Athenos Tajín Crumbled Feta Cheese alongside freshly chopped cilantro and onions and you have a new, favorite dinner time meal.

Ingredients

  • 1.5 lbs seasoned chicken breast or thighs
  • 1 orange, juiced
  • Oil
  • Athenos Tajín Crumbled Feta Cheese
  • 1 cup chopped fresh cilantro
  • ½ cup chopped onion
  • 20-24 corn tortillas (taco size), lightly charred

Method

  1. In a large bowl add orange juice, seasoned chicken thighs or breasts and coat chicken in the marinade mixture.
  2. Cover and marinate chicken in the refrigerator for 1-4 hours. Remove chicken from the fridge.
  3. Grill chicken directly on a grill for 4-5 minutes on each side on a grill on medium-high heat or until the chicken reaches 165 F internally and is cooked through.
  4. To cook on a pan on the stove top, brush the grill pan with oil and cook chicken for 5-6 minutes on each side on medium high heat or until the chicken reaches 165 F internally.
  5. Let the chicken rest for 4-5 minutes covered with foil. Chop into cubes.
  6. Serve a few tablespoons of chicken on corn tortillas with freshly chopped onions, cilantro and Athenos Tajín Crumbled Feta Cheese.
