Ingredients
- 1 lb mahi mahi filet pieces
- Spray olive oil
- ½ cup diced mango pieces
- ¼ cup finely diced red onion
- 1 tsp Tajín Clásico seasoning
- ⅓ cup Athenos Tajín Crumbled Feta Cheese
- 8-12 warm tortillas (taco size)
- ¼ cup greek yogurt
- ¼ cup mayonnaise
- 1 tbsp canned chipotle adobo liquid
Method
1. Preheat the air fryer.
2. Pat dry the mahi mahi filet pieces. Spray each side of the fish evenly with spray olive oil. Sprinkle the fish on both sides evenly with seasoning.
3. Add fish to the preheated air fryer basket. Cook mahi mahi filets at 400 for 8 minutes, flipping halfway through.
4. While the fish is cooking prepare the mango feta topping ingredients. In a medium bowl mix together mango pieces, red onion, Tajín Clásico seasoning and Tajín Crumbled Feta Cheese. Mix together until combined, refrigerate until ready to use.
5. For the chipotle sauce: in a separate small bowl whisk together Greek yogurt, mayonnaise and chipotle liquid until smooth and combined.
6. Once the mahi mahi is finished cooked, break up lightly with a fork if the pieces are large. Top each warmed tortilla with a small piece of fish, a spoonful of mango feta salsa and a drizzle of the chipotle sauce.
