Look towards warmer weather with a Zesty Herb Cantaloupe Salad made with Athenos Tajín Crumbled Feta Cheese.
Ingredients
- 1/2 cup fresh basil, plus extra for topping
- 1/2 cup white balsamic vinaigrette
- 3 oz Athenos Tajín Crumbled Feta Cheese
- 1/2 small cantaloupe cut into long spears
- 2 mangos, cut into spears
- 1/4 red onion, thinly sliced
- 1/2 tbsp Tajín Clásico seasoning
Method
- In a medium bowl mix together cantaloupe spears, mango spears, red onion, Tajín Clásico seasoning, basil and white balsamic vinaigrette until combined.
- Transfer mixture to a serving platter. Top fruit with Athenos Tajín Crumbled Feta Cheese and extra fresh basil leaves.
