Classic Macaroni Salad with Feta

Let's give this side dish classic a bold and boosted flavor with crumbled feta! This classic creamy macaroni salad with feta is perfect for picnics and bbq's!

Ingredients

  • 1/2 lb elbow pasta noodles
  • 1/2 small yellow onion, grated
  • 2 carrots, grated
  • 1 1/4 cup mayonnaise
  • 1/4 cup sweet pickle relish
  • 1 tsp apple cider vinegar
  • Freshly ground black pepper
  • 1/2 cup Athenos Traditional Feta Cheese Crumbles
  • 2-3 green onions, thinly sliced

Method

  1. Bring a large stock pot with water to a rolling boil. Add a few tablespoons of kosher salt and boil the shell bows for 10-12 minutes or until al dente.
  2. Drain macaroni noodles and set aside.
  3. In a large bowl combine cooked noodles, grated onion, carrots, 1 cup of mayonnaise, sweet pickle relish, apple cider vinegar, feta cheese crumbles, and pepper to taste. Cover the bowl and chill for 30 minutes.
  4. Before serving, stir in the remaining 1/4 cup of mayonnaise. Taste test for salt and pepper and top with green onions
