Watermelon Feta Checker Salad
Summers hottest culinary trend is the checker salad. This one is made with bold chunks of Athenos feta cheese, crispy cucumbers and juicy watermelon chunks.

INGREDIENTS
| 1 block | Athenos Traditional Chunk Feta, cut into 1 inch cubed pieces |
| 3-4 cups | Watermelon pieces, cut into 1 inch cubed pieces |
| 1-2 oz | olive oil |
| 1-2 oz | Balsamic glaze |
| 1-2 oz | Mint, chopped |
| 2-3 cups | Cucumber pieces, cut into 1 inch cubes |
Method

- Arrange cheese cubes, watermelon, and cucumber pieces onto a platter in a checkerboard pattern, overlapping each flavor.
- Drizzle the cheese and olives with a light, even drizzle of olive oil and balsamic glaze.
- Top with chopped mint all over the top and serve.
