Greek Salad with Feta
A new take on the Greek classic. This Greek salad is studded with fresh vegetables, drizzled with a bold Greek vinaigrette, and made hearty with garbanzo beans and crumbles of feta cheese. Serve as a side with grilled meats or as a main dish for two.

INGREDIENTS
4 SERVINGS| 2 | medium tomatoes, cut into wedges |
| 1 | small English cucumber, cut into thick half moons |
| 1 | green bell pepper, cut into thin slices |
| 1/2 | small red onion, peeled and thinly sliced |
| 1/2 cup | kalamata olives |
| 1/2 cup | Greek vinaigrette |
| 1 chunk | Athenos Traditional Chunk Feta cheese, cut into triangle wedges |
| 1 tsp | dried oregano |
| Olive Oil | |
| Kosher salt |
Method

- In a bowl combine tomatoes, cucumber, bell pepper, red onion and olives in a large mixing bowl. Drizzle evenly with greek vinaigrette, and sprinkle with the oregano and a pinch of salt.
- Toss gently. Then top with feta cheese. And finish the salad by drizzling a little extra olive oil and extra dried oregano.
