Fried Feta Eggs with Tajín Crumbled Feta Cheese

INGREDIENTS

1/3 cup Athenos Tajín Crumbled Feta Cheese
2 eggs
Kosher salt
cracked black pepper
1-2 tortilla (cooks choice), toasted
1/4 avocado, sliced (optional)
hot sauce

Method

    1. 1. Heat a small non-stick fry pan over medium-low heat. Add in 1/3 cup or so of Athenos Tajín Crumbled Feta Cheese evenly into the pan. Heat for 2-3 minutes or until the bottom is slightly golden brown.

      2. Crack two eggs into the pan over the feta and cook for 3-4 minutes or until the whites have set and the yolk is cooked to preference.

      3. Toast tortilla and mash avocado onto the bottom of the tortilla. Top with the feta eggs and drizzle with hot sauce, a pinch of kosher salt and cracked black pepper.
