Chipotle Beef Tacos with Tajín Feta
These easy slow cooker beef tacos are a simple and tasty dinner to make. It’s a set it and forget it chipotle seasoned shredded beef that is perfect for topping on tacos or burrito bowls. The flavor of the tender shredded meat pairs perfectly with Tajín feta in any pairing.

INGREDIENTS
| 1 packet | taco seasoning |
| 1.5 Ib | chuck roast |
| 1 | yellow onion, cut into chunks |
| 1/2 cup | orange juice |
| 1 | lime, juiced |
| 2 tbsp | chipotle in adobe liquid from can |
| 2 cups | beef broth |
| 1 container | Athenos Crumbled Tajín Feta Cheese |
| 1 container | pickled red onions |
| 1 packet | tortillas |
| 1 bushel | cilantro |
Method

- Rub the taco seasoning on all sides of the chuck roast so that it is evenly coated.
- Place the chuck roast into a crock pot. Add the onion around the roast evenly. Pour in the orange juice, lime juice, broth and chipotle liquid on top of the roast.
- Cook the meat on low for 8 hour. Remove the meat and shred apart with two forks. Taste test for salt and season meat accordingly.
- Optional: Strain the liquid from the bottom of the crockpot to a small sauce pot. Heat on medium-high heat, whisking occasionally until the mixture has thickened. Add the thickened sauce mixture and shredded meat back to the crock pot and keep on warm.
- Serve the meat with warm corn tortillas, Tajín feta, pickled red onions, and freshly chopped cilantro.
