Athenos Roasted Butternut Squash and Apple Salad

INGREDIENTS

2 tsp olive oil
1 1/2 cups diced butternut squash
1/4 tsp kosher salt
1/4 tsp cracked black pepper
6 cups mixed greens
1 small honeycrisp apple, thinly sliced
1/2 red onion, thinly sliced
3-4 oz Athenos Traditional Feta Crumbles
1/4 cup roasted pumpkin seeds
1/4 cup dried cranberries
Balsamic Vinaigrette for serving

Method

    1. Preheat oven to 400°F.
    2. Line a small sheet plan with parchment paper. Add butternut squash and drizzle with olive oil. 
    3. Evenly sprinkle kosher salt and a few turns of freshly cracked black pepper onto the butternut squash. Toss together and bake for 20-25 minutes or until fork tender and golden. Set aside to cool. 
    4. On a large serving platter or salad bowl add greens and spread onto the platter or in the bowl. 
    5. Top with the cooled butternut squash, apple slices, red onion slices, feta cheese, pumpkin seeds, and dried cranberries.
    6. Drizzle with balsamic vinaigrette or serve on the side when serving.
