Athenos Roasted Butternut Squash and Apple Salad

INGREDIENTS
| 2 tsp | olive oil |
| 1 1/2 cups | diced butternut squash |
| 1/4 tsp | kosher salt |
| 1/4 tsp | cracked black pepper |
| 6 cups | mixed greens |
| 1 small | honeycrisp apple, thinly sliced |
| 1/2 | red onion, thinly sliced |
| 3-4 oz | Athenos Traditional Feta Crumbles |
| 1/4 cup | roasted pumpkin seeds |
| 1/4 cup | dried cranberries |
| Balsamic Vinaigrette | for serving |
Method

- Preheat oven to 400°F.
- Line a small sheet plan with parchment paper. Add butternut squash and drizzle with olive oil.
- Evenly sprinkle kosher salt and a few turns of freshly cracked black pepper onto the butternut squash. Toss together and bake for 20-25 minutes or until fork tender and golden. Set aside to cool.
- On a large serving platter or salad bowl add greens and spread onto the platter or in the bowl.
- Top with the cooled butternut squash, apple slices, red onion slices, feta cheese, pumpkin seeds, and dried cranberries.
- Drizzle with balsamic vinaigrette or serve on the side when serving.
