Stuffed Feta Spinach Salmon
These stuffed salmon filets are stuffed with a cheesy, spinach and cream center that goes perfectly with tender flake salmon. Serve these up with roasted potatoes for a sophisticated easy dinner at home.
INGREDIENTS
| 5 oz | chopped frozen spinach, thawed and drained |
| 5 oz | cream cheese, softened |
| 1/2 cup | Athenos Crumbled Traditional Feta cheese |
| kosher salt for taste | |
| 1/2 tsp | cracked black pepper |
| 1/2 tsp | garlic powder |
| 4 | center cut salmon filets |
| 1 tbsp | olive oil |
Method

1. Preheat oven to 400 F.
2. In a bowl mix together spinach, cream cheese, feta cheese crumbles, cracked black pepper, a pinch of kosher salt and garlic powder until smooth and combined.
3. Cut a small slit to the center of the salmon sides to create a pocket without cutting all the way through. Stuff 1/4 of the cream cheese mixture into each salmon pocket. Brush tops and sides of salmon with olive oil. Sprinkle evenly with kosher salt and cracked black pepper.
4. Bake for 13-15 minutes or until the salmon flakes apart easily.
