INGREDIENTS
4 SERVINGS| 3 | whole sweet potatoes |
| 1 lb | ground turkey |
| 1/2 | small yellow onion, finely diced |
| 1 | red bell pepper, finely diced |
| 1 tbsp | olive oil |
| 1/4 cup | tomato paste |
| 1 tsp | garlic powder |
| 1 tsp | smoked paprika |
| 1 tsp | chili powder |
| 1/2 tsp | kosher salt |
| for topping | Cracked black pepper |
| for topping | Athenos Feta cheese crumbles |
| for topping | Avocado slices |
| for topping | Greek yogurt |
| for topping | Fresh chopped parsley |
Method

- Preheat the oven to 400 F. Line a baking sheet with foil and add whole sweet potatoes. Bake for 45-50 minutes or until fork tender.
- While the potatoes are baking, begin the filling. Add olive oil to a medium skillet with yellow onion and bell peppers. Saute for 5-7 minutes or until tender.
- Add in 1 lb ground turkey, break up with a wooden spoon. Stir together and cook for 5-6 minutes or until the meat is cooked through.
- Add in tomato paste, garlic powder, paprika, chili powder, salt and a few turns of cracked black pepper and stir together. Remove from heat
- Remove sweet potatoes from the oven. Slit down the center and gently mash up some of the insides. Sprinkle potatoes with a bit of kosher salt. Top each potato with seasoned meat filling.
- Top with athenos feta cheese crumbles, avocado slices, a dollop of greek yogurt, and freshly chopped parsley.
