Creamed Feta Spinach
This creamy classic vegetable side dish is laced with creamy feta crumbles. A great, stovetop side dish to have alongside grilled steak, roasted chicken or seared salmon!
INGREDIENTS
| 2 lbs | fresh spinach leaves (16 oz) |
| 2 tbsp | unsalted butter |
| 2 | shallots, diced |
| 4 tsp | minced garlic |
| sprinkle | kosher salt |
| sprinkle | cracked black pepper |
| 4 oz | cream cheese, cubed |
| 1 cup | Athenos Crumbled Traditional Feta cheese |
| 1/2 cup | half and half |
Method

1. Bring a large pot of salted water to a boil. Add the spinach and cook just until wilted, about 1 minute. Drain in a colander; rinse with cold water until cool. Squeeze the spinach to remove as much liquid as possible; coarsely chop, and set aside.
2. In a large saucepan, heat the butter over medium heat. Add the shallot and garlic; season with salt and pepper. Cook, stirring occasionally, until the onion softens, 3 to 5 minutes.
3. Add the cream cheese, feta cheese and half and half; cook, stirring, until the cream cheese is melted and smooth. Stir in the spinach. Simmer over medium heat until the mixture thickens, 8 to 10 minutes. Season with salt and pepper.
