Athenos Feta Herb Chicken Meatballs
These feta herb chicken meatballs make for the perfect protein in a mediterranean style bowl! Each bite is juicy, tender, flavorful and herbaceous! Serve them alongside a Mediterranean salad, tzatziki, hummus and olives for a quick and healthy dinner!
INGREDIENTS
| 2 lbs | ground chicken |
| 1 | zested lemon |
| ½ cup | Athenos Traditional Crumbled Feta cheese |
| 2 | large eggs |
| ½ cup | panko breadcrumbs |
| ¼ cup | chopped dill |
| ¼ cup | chopped parsley |
| ¼ cup | chopped mint |
| 3 tsp | kosher salt |
| 2 tsp | garlic powder |
| cracked black pepper |
Method
- In a large mixing bowl add the ground turkey, lemon zest, feta cheese, eggs panko breadcrumbs, dill, parsley, mint, salt, garlic powder and a few turns of cracked black pepper.
- Preheat the air fryer to 400 F.
- With a cookie scoop or large spoon, grab a 1-inch size ball of turkey meat. Roll into a ball and place onto a baking sheet. Continue with the rest of the balls.
- Place a batch of the balls into the basket of the air fryer ensuring that they DO NOT touch. You want to have at least 1 inch of space around the balls to ensure that they brown evenly.
- Bake for 12-14 minutes or until the tops are golden brown and cooked to an internal temperature of 165 F.
