Air Fryer Mahi Mahi Tacos with Tajin Feta
These zesty fish tacos are simply made in the air fryer and topped with the ultimate trio of toppings. Sprinkle each mahi mahi taco with a simple mango pico, chipotle lime sauce and bold Athenos tajin feta.

| 1 packet | taco seasoning |
| 1/2 cup | diced mango pieces |
| 1/4 cup | finely diced red onion |
| 1 | lime, juiced |
| 1 tsp | tajin seasoning |
| 1/3 cup | Athenos Crumbled Tajin feta |
| 8-12 | warm tortillas (taco size) |

| 1/4 cup | mayonnaise |
| 1 tbsp | canned chipotle adobo liquid |
| 1/2 | lime, juiced |
Method

1. Preheat the air fryer.
2. Pat dry the mahi mahi filet pieces. Spray each side of the fish evenly with spray olive oil. Sprinkle the fish on both sides evenly with taco seasoning.
3. Add fish to the preheated air fryer basket. Cook mahi mahi filets at 400 for 8 minutes, flipping halfway through.
4. While the fish is cooking prepare the taco topping ingredients. In a medium bowl mix together mango pieces, red onion, lime juice, tajin seasoning and Athenos Crumbled Tajin feta. Mix together until combined, refrigerate until ready to use.
5. For the sauce: In a separate small bowl whisk together Greek yogurt, mayonnaise, chipotle liquid, and lime juice until smooth and combined.
6. Once the mahi mahi is finished cooked, break up lightly with a fork if the pieces are large. Top each warmed tortilla with a small piece of fish, a spoonful of mango feta salsa and a drizzle of the chipotle lime sauce.
