Roasted Garlic Sweet Potatoes with Feta

These roasted garlic and feta sweet potatoes are the perfect earthy and hearty side dish for any holiday menu. These simple roasted sweet potatoes are made with a few simple ingredients and full of fall flavors!

Ingredients

  • 2 whole sweet potatoes, thinly sliced
  • ⅓ cup Athenos Traditional Feta Cheese Crumbles
  • 3 tsp minced garlic cloves
  • 2 tbsp minced rosemary
  • 2 tbsp thyme sprigs
  • 1 tbsp olive oil
  • 2 tbsp melted butter
  • 2 tsp kosher salt
  • Cracked black pepper, to taste

Method

  1. Preheat the oven to 400 F.
  2. Thinly slice sweet potatoes with a sharp knife or with a mandolin.
  3. In a large bowl add sweet potato slices, feta cheese, minced garlic, rosemary, thyme, olive oil, melted butter, kosher salt and a few turns of cracked black pepper.
  4. Mix potatoes well until all of the slices are coated in the mixture.
  5. Arrange slices in a clockwise circle of an oven proof skillet or large casserole dish.
  6. Bake for 30-40 minutes or until the potatoes are fork tender and golden. Top with extra feta cheese. Top with extra feta cheese before serving.
