Roasted Garlic Hummus Bruschetta

Summer bruschetta is a perfect easy appetizer. Adding hummus to this fresh bite takes the flavor way up! Spread a little roasted garlic hummus (or flavor of choice) to the bottom of your toasts for a fun new twist.

Ingredients

  • 1 small baguette, cut into slices
  • 2 tbsp olive oil
  • 2 cups cherry tomatoes, quartered
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • Cracked black pepper
  • 10 fresh basil leaves, thinly sliced
  • 1/2 cup Athenos Roasted Garlic Hummus

Method

  1. Preheat the oven to 400 F. Cut the baguette into slices and drizzle evenly with olive oil. Place slices on a large baking sheet and bake for 7-8 minutes or until toasted and golden brown.
  2. While the bread is toasting, mix up bruschetta. In a medium bowl toss together cherry tomatoes, 2 tbsp olive oil, kosher salt, a few turns of cracked black pepper, and basil. Mix gently until well combined.
  3. Spread 1-2 tsp of Athenos roasted garlic hummus onto each baguette and top with 1 tbsp of bruschetta mixture.
