Mediterranean Feta Pasta Salad

Mediterranean is the way to go! This pasta salad is brimming with Mediterranean flavors like sun-dried tomatoes, Greek vinaigrette and sharp feta cheese.

Ingredients

  • ½ lb penne pasta noodles
  • ½ small red onion, thinly sliced
  • ½ Persian cucumber, quartered
  • 4 oz Athenos Feta chunk, cubed or crumbles
  • 1 cup cherry tomatoes, halved
  • ¼ cup sun dried tomatoes
  • 1 cup Greek Vinaigrette

Method

  1. In a large pot of salted boiling water, add pasta noodles and cook according to package directions for an al dente noodle.
  2. Drain and rinse the pasta with cool water. After the pasta has drained well, add into a large bowl with red onion, cucumber, feta cheese cubes, cherry tomatoes, sun-dried tomatoes and 1 cup Greek vinaigrette until noodles and veggies are well coated.
  3. Taste test for dressing and add in more to adjust to taste level.
  4. Serve at room temperature or refrigerated.
