These feta herb chicken meatballs make the perfect protein in a Mediterranean-style bowl! Each bite is juicy, tender, flavorful, and herbaceous! Serve them alongside a Mediterranean salad, tzatziki, hummus, and olives for a quick and healthy dinner!				
			
			Ingredients
- 2 lbs ground chicken
 - 1 lemon, zested
 - ½ cup Athenos Traditional Feta Crumbles
 - 2 large eggs
 - ½ cup panko breadcrumbs
 - ¼ cup chopped dill
 
- ¼ cup chopped parsley
 - ¼ cup chopped mint
 - 3 tsp kosher salt
 - 2 tsp garlic powder
 - Cracked black pepper
 
Method
- In a large mixing bowl add the ground turkey, lemon zest, feta cheese, eggs panko breadcrumbs, dill, parsley, mint, salt, garlic powder and a few turns of cracked black pepper.
 - Preheat the air fryer to 400 F.
 - With a cookie scoop or large spoon, grab a 1-inch size ball of turkey meat. Roll into a ball and place onto a baking sheet. Continue with the rest of the balls.
 - Place a batch of the balls into the basket of the air fryer, ensuring that they DO NOT touch. You want to have at least 1 inch of space around the balls to ensure that they brown evenly.
 - Bake for 12-14 minutes or until the tops are golden brown and cooked to an internal temperature of 165 F.
