Edamame, Feta and Black Rice Salad

This protein-packed salad is a great make-ahead dish to be used in lunches and dinners all week long.

Ingredients

  • 2 cups cooked forbidden rice
  • 1 cup cooked edamame (shelled)
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup Athenos Traditional Feta Cheese Crumbles
  • 1/2 cup sesame vinaigrette

Method

  1. In a large bowl toss together rice, edamame, carrots, green onions, cilantro, feta cheese crumbles and dressing until evenly combined.
  2. Garnish with extra cilantro, feta cheese, and green onions before serving.
