Ingredients
- 4 Large (burrito size) low carb tortillas
- 1 lb seasoned ground beef (90/10)
- 4 tostadas
- 1/2 cup Athenos Tajín Crumbled Feta Cheese
- 1/2 cup queso
- 1/2 cup plain greek yogurt
- 1 cup chopped romaine lettuce
- 1/2 cup chopped tomatoes
- Olive oil spray
Method
1. Add seasoned ground beef to a non-stick skillet and cook on medium heat. Break apart the ground beef and cook for 6-8 minutes or until mostly cooked through and browned.
2. Remove from heat to cool slightly.
3. Add 1/4-1/2 cup cooked seasoned ground beef to the center of the tortilla. Spread out the beef so it is in one even layer about the same size as the tostada.
4. Top the seasoned beef with the queso evenly and then with the tostada. Spread a thin layer (about 2 tbsp) of greek yogurt gently onto the tostada. Top with 1-2 tbsp of Athenos Tajín Crumbled Feta Cheese, romaine lettuce and tomatoes.
5. Be careful not to overfill the crunch wrap. Seal each side to the center of the wrap and spray each side with spray olive oil.
6. Cook the wraps in the air fryer at 400 F for 5-6 minutes or 3-4 minutes on medium heat on each side in a non-stick skillet. Remove and cut down the center.
