Cucumber Feta Bruschetta

A light and fresh appetizer to serve at any outdoor gathering. Switch up normal tomatoes with crisp cucumbers and creamy feta cheese.

Ingredients

  • 1/2 baguette, sliced
  • Olive oil
  • 1 cucumber, diced
  • 1 tbsp olive oil
  • 1/2 cup Athenos Crumbled Traditional Feta Cheese
  • 1/2 tsp salt
  • 1/2 tsp cracked black pepper
  • 8-10 fresh basil leaves, thinly sliced

Method

  1. Preheat the oven to 400 F. Spread baguette slices onto a baking sheet and drizzle lightly with olive oil. Bake for 7-10 minutes or until lightly toasted and golden.
  2. While bread is toasting, make the cucumber mixture. In a medium mixing bowl add diced cucumber, olive oil, feta cheese, salt, cracked black pepper, and basil leaves.
  3. Spoon cucumber mixture onto baguette slices and top with extra small basil leaves if desired.
